Using a pastry wheel cutter, cut the dough into strips about 5 cm wide (2 inch) and 7-10 cm long (3-4 inch) (1). In the center of each strip, make a vertical cut with a sharp knife, but don’t cut all the way through to the ends (2).
Repeat with the remaining parts of dough: you should get about 25–28 pieces.
