Mint and Lemon Spaghetti Ingredients
- 20-25 mint leaves
- 1 clove fresh garlic
- 60 g Parmesan cheese (2 oz)
- 4 tablespoons extra virgin olive oil
- 360 g spaghetti (12¾ oz)
- 1 lemon, juice and zest
- Salt to taste
How To Make Creamy Lemon Mint Spaghetti In 20 Minutes
Firstly, finely chop the mint leaves (1), peel and crush the garlic cloves (2), and grate the Parmesan cheese (3).
Then, heat 4 tablespoons of olive oil with a crushed garlic clove in a non-stick pan over medium heat for a few minutes until the oil is infused with the garlic’s flavor, and the garlic turns lightly golden brown in color. After that, remove the pan from the heat source and add the chopped mint leaves, heating for 1 additional minute to incorporate the mint (4). Remember to remove and discard the garlic clove.
Next, cook the spaghetti pasta in a pot of boiling water containing approximately 1 tablespoon of coarse salt (5). Two minutes before the end of the recommended cooking time, drain the pasta, reserving approximately 1 cup of the starchy cooking liquid (6).
Add the cooked spaghetti to the pan with the infused olive oil and mint, along with the juice and grated zest from 1 lemon and the reserved cooking liquid. Cook the pasta over low heat for a few minutes to allow the flavors to fully integrate and the pasta to finish cooking through (7). Once done, remove the pan from the heat and stir in the grated Parmesan cheese (8) until melted and creamy in texture and consistency.
To serve, plate the creamy mint and lemon spaghetti on individual plates. Garnish each serving with a light dusting of grated lemon zest and a few mint leaves. With these final touches, your fresh and creamy mint and lemon spaghetti is now ready to be enjoyed.
NOTE – When grating lemon zest, take care to only include the yellow outermost peel in order to avoid incorporating any bitter flavors from the underlying pith.
