- 2 tablespoons extra virgin olive oil
- 1 medium white onion chopped
- 400 g Italian sausage without casing
- 70 ml dry white wine
- 200 ml chicken stock
- A pinch of salt
- 1/2 teaspoon ground black pepper
- 400 g Gramigna pasta
- 250 g tomato puree
- 50 ml heavy cream or cooking cream
- 2-3 tablespoons Parmesan cheese
In a non-stick pan, fry onion with 2 tablespoons of oil over medium heat for 4-5 minutes until translucent.
Add sausage without casing and chop it with a wooden spoon to break up the pieces. Brown thoroughly.
Once the meat changes color, add white wine and allow it to evaporate over high heat.
Add broth, salt, and pepper then bring to a boil. Cook until the broth reduces.
Meanwhile, cook pasta according to package instructions.
Add tomato puree and heavy cream to the pan with sausage. Continue cooking until the sauce thickens, about 5 minutes.
Drain pasta al dente and add to the pan with sausage. Cook 1 minute while stirring to fully coat gramigna in sauce.
Serve immediately with Parmesan for garnish.
