Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 1 medium white onion chopped
  • 400 g Italian sausage without casing
  • 70 ml dry white wine
  • 200 ml chicken stock
  • A pinch of salt
  • 1/2 teaspoon ground black pepper
  • 400 g Gramigna pasta
  • 250 g tomato puree
  • 50 ml heavy cream or cooking cream
  • 2-3 tablespoons Parmesan cheese

Instructions
 

  • In a non-stick pan, fry onion with 2 tablespoons of oil over medium heat for 4-5 minutes until translucent.
  • Add sausage without casing and chop it with a wooden spoon to break up the pieces. Brown thoroughly.
  • Once the meat changes color, add white wine and allow it to evaporate over high heat.
  • Add broth, salt, and pepper then bring to a boil. Cook until the broth reduces.
  • Meanwhile, cook pasta according to package instructions.
  • Add tomato puree and heavy cream to the pan with sausage. Continue cooking until the sauce thickens, about 5 minutes.
  • Drain pasta al dente and add to the pan with sausage. Cook 1 minute while stirring to fully coat gramigna in sauce.
  • Serve immediately with Parmesan for garnish.
