Ingredients
  

  • 400 g thinly sliced veal
  • 150 g sweet Provolone cheese
  • 1 clove of garlic
  • Fresh parsley
  • 150 g breadcrumbs
  • 100 g Parmigiano-Reggiano cheese
  • Salt to taste
  • Extra virgin olive oil for cooking

Instructions
 

  • Obtain very thin veal slices and flatten them using a meat mallet.
  • Cut the cheese into small cubes.
  • Finely chop the garlic and parsley.
  • Add garlic and parsley to a bowl along with the breadcrumbs, grated Parmesan cheese, and a pinch of salt.
  • Thoroughly mix the ingredients with your hands to create an even breading mixture.
  • Coat both sides of the veal slices with the breadcrumb mixture.
  • Arrange the breaded slices on a work surface and position a few cheese cubes on one end of each slice.
  • Roll up the slices to form bundles and secure each one individually with toothpicks to prevent them from unraveling during cooking.
  • Heat a non-stick skillet with a drizzle of extra virgin olive oil.
  • Once hot, cook the Sicilian rolls for a few minutes per side until golden brown and the cheese inside has melted.
  • Remove the bundles from the skillet and serve them immediately, while piping hot.
