Ingredients
  

  • 1 stalk of celery washed and dried
  • 2 carrots washed and dried
  • 1 clove of garlic
  • 2 onions
  • 5 tablespoons of extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 500 g chicken breast cut into 3-4 cm pieces
  • 3 tablespoons of white flour use almond flour for keto version of this recipe
  • 1 glass of white wine
  • 300 g of peeled tomatoes
  • Fresh parsley to garnish

Instructions
 

  • Cut the celery, carrots, and garlic cloves into small pieces.
  • Thinly slice the onions.
  • Add the flour to a plate and lightly flour the chicken pieces, coating all sides.
  • Heat the olive oil in a large non-stick skillet. Add the vegetables and a pinch of salt and pepper. Fry over medium heat for 10 minutes.
  • When the vegetables are ready, add the chicken pieces to the skillet and cook for about 10 minutes, flipping them occasionally, until golden brown.
  • Add a glass of white wine, mix a little and let it evaporate. It will take a few minutes.
  • At this point, add the peeled tomatoes and lower the heat. Crush them with a spoon, cover, and cook until the sauce has reduced, stirring occasionally.
  • Your Chicken Cacciatore is ready. Serve immediately and decorate with fresh parsley if you wish.
